Seafood - Salmon with Matzo Crust

Yields: 4 servings Ingredients: 1 ½ 6-inch square matzo, broken up 2 tbsp. fresh dill ½ tsp. salt ¼ tsp. pepper 3 tbsp. olive oil 4 (4 to 5oz) skinless salmon fillets, 1-inch thick Preparation Directions: ~ Preheat oven to 450 degrees. ~ In a food processor combine matzo, dill, salt and pepper; process into coarse crumbs. Transfer crumbs to a shallow dish. Roll fish in crumbs and place in a baking dish that has been sprayed with cooking spray. ~ Drizzle oil over fish and bake, uncovered for 10 to 12 minutes or until fish flakes easily with a fork. ~ Serve with lemon wedges if desired.

Since then, guests from all the way in Boston to Florida, and as far as California have come to Charleston South Carolina and dined at Bushido Japanese Restaurant. People come to try their luck with Bushido’s Spicy Tuna Hand Roll Challenge. The reward: A Bushido Warrior Headband, your mugshot posted on the “Wall of Warriors,” and a gift certificate from the restaurant. A worthy battle for the adventurous.

Would-be warriors must eat and finish a total of 10 Spicy Tuna Hand Rolls with varying degrees of hot spice, each level from 1 to 10 getting hotter and spicier from one level to the next.

Majority of the people don’t get to level 10. This isn’t a downer since you are allowed to return at a different time and resume the challenge where you left off. Upon completion of the challenge, you get your rewards.

The few who finish all 10 rolls in one sitting are called “Legends of the Roll.” This gets you a special place on “the wall” alongside other legends, including Adam Richman, the host of the Travel Channel’s Man versus Food series. Adam came to Charleston, SC on a few tips from several customers and hit Bushido’s.

His whole TV crew was there all day setting up everything to film Adam taking on Bushido’s Spicy Tuna Hand Roll Challenge. Of course, everyone got to sample the deliciously authentic Japanese food that Bushido serves.

Many people from far away have come with their video cameras, filming themselves taking the challenge and doing their own version of Man vs. Food. Many of them are quite hilarious and some are frightening, just because you see the level of pain they are obviously going through.

One particular funny video is from restaurant patron, Danny Hwang, who films himself taking on the Challenge. Check for links to the Danny’s video on the resource section of this article. He graciously shared it with Bushido so it’s also posted on the restaurant’s website.

The Spicy Tuna Hand Roll Challenge isn’t the only thing Bushido Japanese Restaurant is famous for. Bushido uses only the freshest ingredients. The sushi chefs slice their fish to create artful presentations that please both the eye and palate. The sushi menu includes Nigiri, Sashimi and Sushi Rolls (spicy tuna rolls, california rolls, salmon rolls). Bushido can also also help you make your own sushi creation.

The restaurant proudly posts the 7 codes of the Bushido warrior on one of the walls in the restaurant. It’s not a marketing gimmick, it’s just that owner, Gamby Balagtas, strongly believes in applying all these codes to the way Bushido serves it’s customers.

Gamby has a Bachelor’s Degree in Business and Economics, but also has over 14 years of experience cooking and preparing Japanese food. Even without Bushido, he was constantly being sought after by customers to do their hibachi. He developed his loyal customer following with his good cooking, friendly demeanor, and excellent service.

The Recipe of Tandoori Chicken Ingredients: 1.Chicken - 6 pieces ( approx 1lb), washed & skinned drumsticks Marinade: 1.Yogurt - 1 1/2 cups, well beaten 2.Ginger Paste - 1 tbsp 3.Garlic Paste - 1 tbsp 4.Red Chili Powder - 1/4 tsp 5.Paprika - 1/2 tsp 6.Tandoori Masala - 1 tbsp 7.Coriander Powder - 1 tsp 8.Salt - to taste 9.Lemon Juice - 1 tbsp 10.Red Food Color - 2 drops, optional 11.Green Chili - to taste, ground Baste: 1.Lemon Juice - 1/2 cup 2.Tandoori Masala - 1/2 tsp 3.Salt - to taste, optional 4.Red Food Color - 2 drops Method: 1.Wash the skinned Chicken well and with a knife, make 1-inch slits in it. 2.Put the chicken in a gallon size zip lock bag and add in the Lemon Juice. 3.Give it a good mix and let it sit while getting the marinade ready. 4.Pour all of the marinade ingredients in a bowl and mix well. 5.Do a taste test for the marinade and adjust the salt and other spices as needed. 6.Add the marinade to the chicken (in the zip lock bag) and give another good mix. Make sure all the pieces get well coated with the yogurt mixture. 7.Store in the refrigerator to marinate overnight or minimum of 4 hours for best results. 8.At the time of barbecuing, pre-heat the grill to medium-high heat. 9.Get the baste ready by mixing all the ingredients together. 10.Once the Grill is ready, spray some cooking oil on the grill so that the chicken does not stick to the grill. 11.With tongs, place the chicken on the grill and close the lid. Allow it to cook for 5 minutes. 12.Flip

In the Kitchen with Ken: Salmon Burgers and Spicy Crab Cakes

Salmon Burgers 2 pounds Salmon Fillets 2 eggs 1 lemon 1/2 large red bell pepper, diced 1 1/2 cups of Panko bread crumbs Lemon Dill Sauce (McCormick) Cucumber Lettuce Tomatoes Extra virgin coconut oil Remove salmon skin from the fillets and dice the salmon finely. In a separate bowl, mix the eggs and lemon juice well, then pour over salmon and add red bell pepper and 1 cup of Panko. Mix. If the mixture is too moist and doesnt hold together well, add the remaining panko bread crumbs as needed. This mixture should make 6 to 8 large patties. Place a spoonful of the coconut oil on the griddle on the grill and let it melt down. Add the patties and cook until desired doneness. Serve hot on a toasted bun with a layer of fresh cucumbers, lettuce, tomatoes and cover with a lemon dill sauce. Spicy Crab Cakes 1 pound blue crab meat 1/2 large red bell pepper, diced 1/2 teaspoon white pepper 1/2 teaspoon red pepper 1 teaspoon Tony Chacheres Seasoning 1/2 teaspoon sea salt 1 teaspoon roasted red pepper 1/3 of a cup of mayonnaise 1 lime 1 lemon 2 cups Panko bread crumbs Tartar Sauce Cucumber Lettuce Tomatoes In a mixing bowl, add the eggs, juice from the lemon and lime and the mayonnaise and mix together well. Pour over the crab meat. Add the spices, red bell pepper and 1/2 cup of the Panko. Mix well and begin forming the patties. After you have formed the patties, pour the remaining panko in a pan and lightly dredge the crab cakes in the crumbs. This mixture should make 6 medium sized
